  • 3 medium-sized zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • Cooking spray



  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the zucchinis into thin strips, resembling the size of traditional fries.
  3. In a bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  4. Dip each zucchini strip into the beaten eggs, ensuring it’s coated evenly.
  5. Coat the zucchini in the breadcrumb mixture, pressing gently to adhere.
  6. Place the coated zucchini fries on the prepared baking sheet, leaving space between each piece.
  7. Lightly spray the fries with cooking spray to help them crisp up in the oven.
  8. Bake for 20-25 minutes or until the zucchini fries are golden brown and crisp.
