Cajun Shrimp and Rice Skillet

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 ½ cups long-grain white rice
  • 1 bell pepper, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion, bell pepper, and minced garlic. Sauté until vegetables are tender.
  3. Season shrimp with Cajun seasoning, salt, and pepper. Add shrimp to the skillet and cook until pink and opaque.
  4. Stir in rice, diced tomatoes, and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook until rice is tender.
  5. Garnish with fresh parsley and serve hot.
